Chocolate Pumpkin Cupcakes {cheater version}

Ok, I did give you fair warning that this recipe is definitely a cheater version
but I can tell you it's perfect for a slightly healthier,
quick batch of cupcakes.

So, here are the ingredients

any box of chocolate cake mix
1 15oz can of pumpkin {not the kind with added sugar or spices}
I told you this was easy...

I realize you are all smart enough to figure out how the recipe goes from here
but I'll continue on anyway :)

Open up the cake mix and dump it into a mixing bowl or stand mixer.
Pour the pumpkin puree into the same bowl.

And start mixing away!
Heads up - the mixture will look very dry at first!

but keep mixing because in just a few minutes it will look like this:

Now you're ready to pour the batter into cupcake tins and bake!
Follow the baking instructions on the back of your cake mix
as all backing directions will vary slightly.

Pull 'em out of the oven and...viola!

Chocolately cupcakes!
I'm not going to say they taste exactly the same as ordinary chocolate cupcakes,
they're really more like a muffin.
not quite as sweet, but super moist and delicious!

My particular cake mix originally called for:
 1 1/4 cups water
1/3 cup of oil

And the 1 can of pumpkin replaced all that!
Still not the most healthy snack on earth,
but better than making it the way the box recommends :)

Both of my boys could barely stop to breathe while inhaling these
