Green Apple Wrap {a recipe}

I guess this should technically be called the hummus, green apple, carrot and spinach wrap,
but that seemed a bit too long.

Anyway, the bottom line is that this thing is tasty, healthy and comes together in about 3.27 seconds flat.
{all are highly important things once the weather gets a little spring-ish}

Anyway, here we go:

I started with one of these wraps for two reasons only
1. they're inexpensive
2. they don't taste like they're low calorie {bonus}

Spread hummus over the entire wrap. Slice 1/2 of a green apple thinly and layer the discs on top of one another along one side of the wrap.

Next, layer in some shredded carrots {I bought the pre-shredded kind} and a handful of spinach right next to the apple slices.

Roll the wrap up {start from the side that has the apples}, slice it in half and you're ready to go!

Fresh, crisp, flavorful and did I mention fast?!
Yum.

An old co-worker shared this recipe with me, but if anyone knows the original source, please let me know!

Happy wrapping!

twenty five

Last week, I turned 25.
I feel like a real grown up now...or, at least like my age actually reflects it :)
I've wanted to be 25 {for whatever reason}for as long as I can remember...
and now it's funny that I finally am!
I just know that this 25th year is going to be an amazing one.

Hubby spoiled me and the last few days have been filled with food, friends, gifts and did I mention food?! These people know the way to my heart!

Here's a look at the birthday weekend festivities

I woke up with this picture right next to my face, and breakfast in bed. Not a bad start :)

My sweet, sweet boy picked these earrings out for me all by himself. He melts my heart.

We had yummy veggie lasagna for dinner!

We went to the library...

Some of my birthday flowers!

On Saturday, Isaiah got to build a wooden car at Home Depot...how cool is that?!

Then we headed down to the first outdoor market of the season!
I love all the fresh produce.

and these absolutely amazing, melt-in-your-mouth delicious donuts.
They're life changing...and I don't even really like donuts.

Of course we finished off our trip with popcorn and soda from our favorite downtown news stand.

Throwing rocks in Na-Na and PopPop's creek.

We headed to Ashland for dinner, but felt the need to share this gigantic caramel apple first.
This thing was GOOD.

We shopped around at some of our favorite stores.

and tried on silly sunglasses

We ate at an Asian place, and I got a yummy eggplant and tofu dish!

my lovely friends who came to surprise me :)

Sunday it was freezing and foggy until almost 1:00 when the sun decided to come out and make things happy and 65 degrees.
We did some yard work,
Went on a 4 mile walk and then watched Hubby's basketball game.

Yep...good weekend.

How was your weekend?!

Rollo Stuffed Chocolate Chip Cookies

These are so easy and so {soooooooo} good!
Start out by making your favorite chocolate chip cookie recipe
you can find my ultimate cookie recipe here
seriously, make them following this recipe and you'll never go back.

Now, in addition to the cookie ingredients, you'll also need a bag of rollo's...shocking, I know.
So, unwrap a bunch of them before you get started so they're all ready for you.
Once the cookie dough is finished, put a rounded tablespoon full in your palm and roll it into a ball.
Then, use your thumb to flatten the dough out into your palm until you have a round cookie dough pancake.
Next, place a rollo in the middle and fold the dough around it.
Roll the dough until you can't see the rollo.
Place it on a baking sheet and repeat!

Follow the norma baking time and temperature for your recipe.
I baked mine for about 10 minutes and didn't have any caramel melt out.
They are divine.
I suggest giving some away so you don't sit and eat the entire batch in one sitting.
Or don't. Whatever.

Either way,
Ejnoy!

Monday Giveaway: Rogue Baby Boutique

It's been a while since we've started the week out with a giveaway, but I happen to think that the prospect of winning some sweet loot is a pretty nice way to start the week.
So here we are!

I'm excited to bring you this week's shop, as it's a fellow local business owner!
This is Ricki {and her precious daughter, Ella}

She and her husband own Rogue Baby Boutique

An adorable online shop featuring custom diaper wipes cases, crocheted hats, beautiful hair bows {and hair bow holders} headbands and more!

"Rogue Baby Boutique was an idea that started in April 2010 when our daughter was born. I received a super cute custom diaper wipes case from a friend and got so many compliments on it. I decided to give it a shot making them myself. Soon I was getting custom orders from friends, and an Etsy shop soon followed. Since then, we've branched out to custom hair bows and headbands, custom hair accessory holders, and adorable crocheted hats. My husband Kyle and I plan on adding some additional nursery decor to the shop in the coming year. Our dream is to one day open a shop here in Southern Oregon that would feature our signature items, nursery furniture, clothing and much more."

Super adorable baby items, right?!
