Veggie Pot Pie {and a giveaway winner!}

This is one of those recipes that makes you feel all warm and tingly inside.
Perfect for making on a cool fall evening.

I make this dish vegetarian, but you could easily add chicken and make this a regular 'ol chicken pot pie.






 The filling is normally thicker, but I was super hungry and in a bit of a rush to cut a piece of this bad boy :)

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves of garlic
  • mushrooms {I used an entire 8oz package}
  • 2 carrots
  • 1 can of corn
  • 4 small red potatoes
  • 2 cups broccoli florets
  • 1 cup frozen edamame, thawed
  • 3 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 5 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • frozen pie crust {one for the top, and one for the bottom}

Directions

  1. Preheat oven to 425 degrees
  2. Heat oil in a large skillet or saucepan. Cook onions, mushrooms, and garlic in oil for 3 to 5 minutes, stirring frequently. Stir in carrots, potatoes, and mushrooms. Stir in broccoli, edamame, and vegetable broth. Bring to a boil, then turn heat down to a simmer. Cook until vegetables are barely tender, about 5 minutes. Season with salt and pepper.
  3. In a small bowl, mix the cornstarch, soy sauce, and 1/4 cup water until cornstarch is completely dissolved. Stir into vegetables, and cook until sauce thickens, about 3 minutes.
  4. Roll out 1/2 of the dough to line an 11x7 inch baking dish. Pour the filling into the pastry lined dish. Roll out remaining dough, arrange over the filling, and seal and flute the edges.
  5. Bake in preheated oven for 30 minutes, or until the crust is brown.

Some Thoughts {and a giveaway winner!}

I've been doing lots of thinking lately,
and it's made me come full circle.

What does blogging mean to me?
Why do I do it?
What would I like to share with my readers?
Does this blog hold a greater purpose?

So, now I'm back to the place where I was when I started this blog.

What is my voice, and what do I want to blog about?

I started this blog as a way to promote my shop, and my handmade items, and it seemed really natural to include things about my hubby and son.
I started posting tutorials and DIY projects, as well as recipes and it was so fun to share the things I was making!
I was SO excited when I was first contacted to host a giveaway for a handmade shop!

However, now I feel like my blog has turned into a journal.
A way for me to document life {mostly Isaiah's} and I don't think that's what I ever intended this blog to be about.

I've heard lots of bloggers say it's so important to 'find your voice'
and I don't think I've ever tried to be someone other than myself,
but I'm ready for my blog to change.

I still plan to post lots of recipes and DIY projects,
and bring you giveaways from amazing handmade shops,
and {who am I kidding} there will still be updates on Hubby and Zaiah.

BUT,
I also want this to be a really inspiring, motivational and encouraging place.
I want to have important conversations,
and challenge people to be the very best they can be.

I want to challenge myself to be the very best I can be.
And I want to take that step here, on my blog, with all of you.

So I dare you to stick around for this adventure.
I don't exactly know what it's going to look like, but it's going to be great.

{whoa, that ended up being kinda deep :)}

A Weekend In Portland {and a giveaway winner!}

Last Wednesday we packed up for a long weekend in Portland.

Take a peek at what we did:
Played dress up with all of Cousin Ben & Sterlings masks..



Went to the Children's Museum...




Took a trip to the zoo
 - which -
I could {and might} dedicate an entire post to...


Played in the bouncy house...



Gave Lenny an 80's makeover...


Had
The.Best.Ice.Cream
EVER
from this place.
Where the line was out the door. Like, way out.




Went to the Portland Saturday Market...
{which included ridiculously large cookies and pad thai}


Took a walk down by the waterfront...

Found a vintage Mr. Potato Head...




Had our first VooDoo Doughnut...




Visited a rose garden where Lenny Lennerton got to run around...

Stopped by Fabric Depot where I got lots of fabric and TONS of ideas...


And had a picnic lunch {the kind in the car} on our way home.

Whew!
Busy, busy weekend...and I wouldn't trade it for anything!

Giveaway Winner {Red's Rosies}


Happy Sunday afternoon gumdrops!
We just wrapped up eating our weekly Sunday dinner,
and ate enough food for 3 days
 - give or take-
{which included key lime cheesecake...more on that later}

A Wonderful Father's Day {and a winner}

My goodness,
today, was a day.

Our little family packed up and drove to the coast,
to celebrate Zaiah's wonderful daddy!
We appreciate him so much,
but it's nice to have a special day with LOTS of appreciation :)

It was such a beautiful day
{aside from the wind}
and I'm so very thankful we were able to go!

So, here are some snapshots from our day.
{warning: picture overload is about to occur!!}


First, we had breakfast,
{homemade cinnamon rolls...you're gonna want need to try this recipe}
Attempted to take a family picture,
And then started our adventure!



Isaiah and his daddy played...a lot.
{he LOVED the sand}
We built sand castles,
dug a hole,
and touched our toes in the water.

And then we were hungry.



So we went to the harbor and ate :)
Hello award winning clam chowder for 3 years in a row - you were delicious!

And it was so exhausting that Isaiah fell asleep about 2.35 seconds after we got in the car,
and slept the entire way home.


It was a great day!
We love you daddy :)
